This region was a giant prehistoric lake 30,000 to 42,000 years ago: Lake Minchin. This, and the intense seasonality create a unique microclimate that yields an incredibly durable crop, a larger, rounder seed, that tastes nuttier and is fluffier when cooked than the regular Quinoa.
